Ahead of this weekend’s Foodies Festival at Ripley Castle, we’ve managed to catch 60 seconds with Murray Wilson, previously head chef at Norse in Harrogate and now taking up the helm at Horto at Rudding Park. Here’s what Murray had to say!
Q: As a familiar face on the Yorkshire food scene, what Yorkshire produce do you enjoy working with the most?
A: Local fish from Hartlepool is the best.
Q: What experiences have helped shape your journey as a chef?
A: Simply working with other great chefs and suppliers.
Q: Which restaurant would you love to eat at right now?
A: It has to be Alinea, Eleven Madison Park or Maaemo.
Q: What has it been like running Horto as a pop-up at Rudding Park?
A: Fantastic. I’ve really enjoyed working with Adrian in the garden and the rest of the team.
Q: As this won’t be your first time at the Foodies Festival, what keeps bringing you back?
A: It’s just really great to meet local food enthusiasts!
Q: How do you see your style of cooking changing over the next few years?
